Ingredients:

  • 8 ounces gluten-free penne pasta or whole-wheat penne pasta
  • 2 tablespoons extra-virgin olive oil
  • 1 lbs. boneless, skinless chicken breast or thighs, trimmed, if necessary, and cut into bite-size pieces.
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground pepper
  • 4 cloves garlic, minced
  • 1/2 cup dry white wine
  • Juice and zest of 1 lemon
  • 10 cups chopped fresh spinach
  • 4 tablespoons grated Parmesan cheese, divided

Directions:

  1. Cook pasta according to package directions. Drain and set aside.
  2. Meanwhile, heat oil in a large high-sided skillet over medium-high heat. Add chicken, salt and pepper; cook, stirring occasionally, until just cooked through, 5 to 7 minutes.
  3. Add garlic and cook, stirring until fragrant, about 1 minute. Stir in wine, lemon juice and zest; bring to a simmer.
  4. Remove from heat. Stir in spinach and the cooked pasta. Cover and let stand until the spinach is just wilted.
  5. Divide among 4 plates and top each serving with 1 tablespoon Parmesan.

Hey guys, I’m Lori J. Simpson, Chief Farm Girl and I rule the roost at Hummingbird Rancho along with my husband, Bryan. Together, we have raised 4 beautiful, amazing souls, all of whom are just starting their own life journeys and learning to ‘adult’.

In the Summer of 2020, during the height of Covid, we came to the realization that the world was changing and we needed to be ready for it. Suddenly, food and supplies were becoming difficult to get and people were dying. We were reminded that the most important things to us were family and health, so we decided to move from the city to the country to have more space to grow our own food but also accommodate our growing extended family (we are going to be 1st-time grandparents in May!) We stumbled onto our little 3- acre farm in S. Boise, jumped in with both feet and became full-time farmers while still working our full-time jobs! I’m so excited to continue to build something that will help sustain our local neighborhood community in the future through education, classes, and sharing our farm products. Each month I’ll offer a little something to connect with you.

We are currently very busy garden planning and gearing up for baby chick season. In addition to poultry, we offer pasture-raised eggs, seasonal produce, flowers, medicinal and culinary herbs, as well as fresh baked goods and other specialty items through our little farm stand and upcoming CSA shares.

FEBRUARY TIPS:

Our local growing zone is 6b-7a so it’s the perfect time to start planning your garden. Here are 3 things you can do even though there’s snow on the ground:

  1. Take inventory and organize your seeds. Toss out any that are outdated
  2. Draw out your garden spaces (graph paper is my favorite!) and determine what and where you want to plant
  3. Make your seed list and orders to ensure you have what you need when it’s time to plant.

Don’t start your plants from seeds? You can still make a plan for what you want to do with those plants you’ll soon be picking up!
